Bunu yapmak için, nano düzeydeki teknolojiler, karakterizasyon ve buna ilavaten biyonanoteknoloji uygulamaları verilecektir. Gıdalarda nanobilim, nanoteknoloji ve biyonanoteknolojideki gelişmeler ve bunların insan sağlığı ve çevre üzerine etkileri açıklanacaktır. OBJECTIVES The aim of this course is to introduce the understanding of basics, principles and new developments of nanotechniques and nanoapplications in foods. In doing so, nanoscale technologies and characterization in foods including bionanotechnology applications will be given. New developments on nanoscience, nanotechnology and bionanotechnology in foods and their effects on human health and environment will be explained. İÇERİK Nanobilim ve nanoteknolojiye giriş, Nanoteknolojinin endüstriyel/gıda endüstrisindeki uygulamaları, Nanopatikül yapımı: Top-down ve bottom-up yaklaşımları, Nanoküre ve nanotüplerin özellikleri, Nano-emülsiyonlar, nanojeller ve bunların uygulamaları, Nanobileşimler ve nano düzeyde yapılandırılmış maddeler ve bunların uygulamaları, Gıda biyopolimerlerinin nano düzeyde özellikleri: mekanik, ısısal, elektriksel, fiziksel ve kimyasal özelliklerin belirlenmesi için metotlar, karakterizasyon için kullanılan araçlar (örn., AKM, NMR), Gıdalarda nano teknikler:Nanofiltrasyon, membrane emülsifikasyonu, atomizasyon, nanoenkapsülasyon ve kontrollü yayılma teknolojileri, Gıdalarda nano sensörler, DNA mikrodizilimin mikrobiyal analizler için uygulaması, Gıdalarda biyonanoteknoloji uygulamaları: nano düzeyde biyoteknoloji, Biyolojik kompleks nanomaddeler, bakteriyel sporlar, Aljinat bazlı nanoyapıların mikrobiyal üretimi, Gıdalarda biyonanoteknoloji uygulamaları:Moleküler biyokopyalar: polipeptidlerin inorganik yapılara bağlanması, Biyonano fabrikasyon, Antimikrobiyal nanomaddeler: mevcut ve potansiyel uygulamalar, Gıdalarda fonskiyonel nanomaddeler, Nanoteknoloji: insane sağlığı ve çevre açısından sonuçlar, limitler, Gıdaların nanoteknolojisinde yeni yaklaşımlar.
